Seasoned chicken breast and cheese cooked with colorful bell peppers and sautéed onions, when sandwiched between two tortillas, is one of the best recipes you can prepare in just about half an hour!
One night, I had no clue what to cook when I noticed that I had leftover steak in my refrigerator. Viola! That’s when I created this innovative recipe. You can try it in your homes; you can tweak the ingredients and measurements to suit your tastes. Complete your quesadilla dish by serving it with salsa, guacamole and sour cream.
Recipe for the best quesadilla
Mexican food, with its freshness and delicious seasoning, is one of my favorite foods ever. I can eat it all my life.
What ingredients will you need for chicken fajita quesadilla?
- Vegetable oil – 2 tablespoons
- Sliced onion – ½
- Green bell pepper – ½ (sliced nicely)
- Flour tortillas – 4
- Cooked steak – about ½ pound (cut into thick pieces of ¼ inch each)
- Mexican cheese blend – 1 cup (shredded)
- Salt to taste

Prepping the chicken
Take about 1 tablespoon of fajita mix and season the chicken breast strips very well.
Cooking the chicken
In a large skillet, pour one tablespoon of olive oil (or any oil you are using). Add the seasoned chicken breasts to the oil and cook for about 10 minutes. The pink color should vanish and the chicken should be slightly charred, and not burnt. After 10 minutes, take out the chicken from the skillet. Use a clean cloth to wipe the skillet thoroughly.
Sautéing the other ingredients
Add one tablespoon of oil to the skillet. Add the sliced onions and sauté for a few seconds until they turn translucent. Now, add the bell peppers and the fajita mix into the skillet and stir well. After five minutes, add chicken and cook for one minute until all the ingredients blend and cook well.
Assembling the quesadillas
Take another skillet and melt some butter in it. Add a tortilla and move it slightly until the tortilla turns buttery. Now place some of the mixture containing the cooked onions, bell peppers, garlic and chicken on top of the tortilla. Add as much cheese as you like to this. Keep another tortilla on top of this mixture and pat it down well.
Finishing the dish
Flip the contents in the skillet so that it is cooked on both sides. Remove from the skillet once both sides have turned nice golden brown. Place the tortillas on a plate and cut into quarters. Repeat the same steps for the remaining tortillas. Don’t forget to serve the dish with sour cream and salsa.

My family and I love the taste of plain cheesy quesadillas for lunch. If you like them, you can make them within minutes, by following these steps:
- Flour tortillas, butter and shredded cheese are the only 3 ingredients you will need
- Melt some butter and brush one side of the tortilla with melted butter.
- Heat a skillet on medium-high flame and place the tortilla on it, with the buttered side facing down.
- Apply a generous layer of shredded cheese on top of the tortilla.
- On top of this, place another tortilla, with the buttered side facing up.
- Cook until the side facing down turns golden brown. Now, flip and cook the other side as well. By this time, the cheese would have melted well, too.
What can I add to my quesadillas?
As it is a very flexible and simple dish, the quesadilla is compatible with almost any kind of meat and vegetable that you want to add to it.
What types of cheeses are best for quesadillas?
Always use cheeses that are semi-hard while making quesadillas. These types can melt easily and give a nice flavor to the dishes:
- Cheddar
- Monterey Jack
- Colby Jack
- Asadero – most commonly used for Mexican dishes
- Oaxaca Cheese – most commonly used for Mexican dishes
How to store leftover chicken fajita quesadillas?
If you have chicken fajita quesadillas leftover, you can store them in an airtight container before putting them in the refrigerator. They stay good for about 3 days. Always reheat on the stove before consuming to avoid quesadillas turning soggy. However, please wrap each quesadilla in a parchment paper to seal them well if you want to increase the shelf life. Put them in the freezer, and they will be alright for up to 4 months.
