I saw a pea recipe in a magazine a couple of weeks ago and loved the idea to use peas (I never eat peas) and because it is warm already, I wanted to do something fresh… This super simple no-cooking recipe is just perfect!
Pea & coconut gazpacho
For 4 person you will need
300gr of fresh or frozen peas (I used frozen ones)
a can of coconut milk
3dl of hot vegetable broth
curry powder, salt, pepper, olive oil
Mix your peas with the coconut milk and broth until it is smooth. Add curry powder, salt and pepper to taste. Place in the fridge for at least 2 hours and sprinkle some olive oil on top when serving… voilà, can’t get easier than that!
