I made these for a party last week and they were a huge success. The sweetness of white chocolate contrasts perfectly with the acidity of fresh raspberries… yummy!
white chocolate and raspberries brownies
You will need
150gr white chocolate
150gr butter (at room temperature)
250gr fresh raspberries (frozen ones could work too)
Pre-heat the oven at 180c. Melt the chocolate, set aside.
In a bowl, mix the butter, sugar, eggs and melted chocolate. Add the flour and mix again well.
Gently incorporate the raspberries (by hand!) so that they are not too crushed. Place the paste in an oven-proof dish and bake for about 30 minutes (until the top is golden, use a knife to see if it is baked through).
Cut into little squares and either add a white chocolate frosting or sprinkle with powder sugar.
