This recipe started as “white chocolate and lemon brownies” but I somehow wasn’t happy with the result so transformed it in cupcakes by adding a lemon cream cheese frosting… and it turned out absolutely de-li-cious!
White chocolate and lemon cupcakes
You will need
(for the base)
100gr butter, 100gr white chocolate, 2 eggs, 100gr sugar, zest of 1 organic lemon + 2 tbs juice, 100 gr flour
(for the frosting)
50gr melted butter, 150gr cream cheese, 60gr icing sugar, 1tbs lemon juice + zests of organic lemon (use the rest from the base)
Pre-heat the oven at 180c.
First start by melting the white chocolate (microwave or bain-marie) together with the butter. In the mean time, put the sugar and eggs in a bowl and mix well for 2-3 minutes. Add the flour and melted chocolate-butter, mix for another minute.
Pour the preparation into cupcake forms (only half full!) and bake at 190c for 20 minutes (test if it is cooked through by putting a sharp knife into the cake, if it comes out clean, it means it is ready). Let the cupcakes cool down completely.
Prepare the frosting by mixing all ingredients together and decorate the cupcakes!
