My problem is that when the weather is really cold outside, I tend to eat a lot of carbs with grease on top so in an attempt to eat healthy (but without being hungry again after two hours) and with the food I had in my fridge, I made these baked zucchini…

I used zucchini but you could also do the same recipe with peppers and eggplants. The importance is to pre bake them while preparing the filling so that no ingredient gets overcooked. I had ham, herbs and Parmesan cheese but you could also use rice or any ingredient you want (like here).

Baked zucchini

you will need (for 4 person)

4 big zucchini

100 gr. ham

100 gr. grated Parmesan

fresh parsley and oregano

1 tbsp flour

olive oil

salt and pepper to taste

Pre-heat the oven at 200c.

Cut the zucchini lengthwise and remove the flesh with a spoon. Sprinkle with olive oil and put the zucchini in the oven for 10 min. (time to prepare the filling).

Cut the zucchini flesh into small cubes, cook them in a frying pan with some olive oil and salt for about 3 min., set aside.

Mix the flesh with chopped oregano, parsley and ham. Add the flour, salt and pepper. Put the filling over the zucchini and place in the oven for another 10-15min. Serve immediately.
