grilled asparagus with parsley vinaigrette
For 2 person, you will need
500 gr fresh, thin green asparagus
balsamic vinegar (and balsamic cream)
salt and pepper
prosciutto di Parma (if you can’t find any, you can use smoked salmon, smoked turkey… anything dried or smoked really)…
Start by washing the asparagus, if you can find thin ones (like the ones I used), you won’t need to peel them. Put some olive oil in a frying pan and grill them for about 10 minutes (they have to be cooked but still a bit crunchy). Set aside.
Prepare the vinaigrette by mixing 3 tbsp of olive oil, 2 tbsp balsamic vinegar, 1 tbsp of mustard and 1tbsp of balsamic cream. Chop some fresh parsley and add it to the mixture.
Dress nicely on 2 plates and add some slices of proscitto. I served it with some grissini on the side to give it a bit of crunch.
